Crispy Green Snacky Goodness

I recently made the most tremendous snack discovery – it quite literally shook my entire snack belief system: pairing a somewhat obscure vegetable into a scrumptious, highly nutritious snack!? Yes, my friends… I’m talking about Kale Chips. And I’m addicted.

We first received a kale bunch from our friends at Doorstep Produce. Our bi-weekly box included a recipe for kale chips. Intrigued, we tried it out. Holy rock-my-snack-world green crisps of goodness! I truly had my first obsessive snacking experience. Honestly: I could not stop… I was completely powerless!

But the best thing about this obsessive-compulsive experience is that Kale Chips are really good for you! They are low in calories and fat, and high in potassium, vitamin A and iron. Kale is high in fiber and helps with digestion. It boosts the immune system and helps lower cholesterol levels.  So I didn’t feel one bit guilty! (Side note: there are some dietary cautions about too much kale, so be sure not to overdo it!)

Making them is very easy:

  • Rinse the leaves well.
  • Pluck off the sprigs.
  • Dry well and toss in olive oil, add salt and pepper.
  • For best results bake on a pizza stone at 300 degrees for 15-20 minutes (or until crispy.)

Do not refrigerate or seal. If the leaves get wilted or soft, put them in a toaster oven for a few minutes… they’ll crisp right back up!

I’m over the moon for these little green snacks of goodness! Try them out… I think you’ll really enjoy them!
